Too Many Cookies
SAID NO ONE EVER… but in the spirit of “Kitchen Gadgets are my Jam” let me address this issue. So many of you have messaged me about my Grammy K Triple Chocolate Toffee Brownie Cookies. Everyone has absolutely loved them BUT a piece of feedback I received was “I can’t possibly eat 72 Cookies…can you cut the recipe down?!” I have tried to accommodate this BUT just like doubling a recipe doesn’t always work - cutting one down doesn’t either. I suggested freezing the baked cookies since this recipe freezes exceptionally well but some found that too accessible. I can’t argue with you because these cookies are amazing right out of the freezer!
To that end let me share a genius kitchen gadget for saving cookie dough and baking later. I originally got the idea from my friend Peggy. She loved the recipe but she did NOT want 72 cookies laying around because eventually she would end up eating too many of them. Peggy’s answer to this was to freeze cookie trays with the uncooked cookie dough on them and then putting the frozen balls of cookie dough in ziplock bags for cooking later. The problem for me is that I do not have a freezer that accommodates a cookie sheet pan. However I loved this idea of taking (homemade) cookie dough and baking them fresh when desired. I especially loved this because I worked the entire time my kids were growing up. Fresh out of the oven cookies didn’t happen very often. Don’t get me wrong I baked cookies and my children enjoyed them but between work, school, and sports activities the time to make a recipe start to finish was limited. Now that I am a Grandmother and retired I would like for my grandson’s to have treats when they come to my house and remember yummy bread or homemade cookies. Enter the Cookie Dough Freezer Trays found on the (yes, you guessed it) King Arthur Website. These trays are an answer to prayer. They take up very little space and they allow me to freeze 15 individual cookies in each. Now when the grandkids are coming by I can pop a tray out of the freezer, fire up the oven and serve them a nice freshly baked cookie. The trays are made of silicone so it is very easy to pop the ball of dough out of the tray and place it directly on the cookie sheet. Just add 2 minutes to the standard cooking time and you are good to go. These cookie freezer trays have a lot of other uses. Check them out on the link below.
