Gluten Free Baking

I do not have an issue with Gluten “per say”. I do notice that sometimes I get stomach discomfort after eating cookies or bread but it is tolerable and I don’t have to make adjustments for it. However, many of my friends and family have mild to dramatic issues with Gluten. Sadly when I think about it I know so many people with severe Gluten intolerance and Celiac disease. Baking is a constant battle for them and prevents them from trying recipes that are not Gluten Free. While there are a tremendous number of great Gluten Free recipes out there sometimes you just want to try a recipe that isn’t Gluten Free…but they just never turn out good.

I have a tried and true recommendation for you if you are affected by Gluten Intolerance. My long time friend Virginia has a 16 year old daughter Sierra who has suffered with Gluten and Dairy issues since she was little. When I posted about my Snickerdoodles Virg reached out to me and asked what I might recommend for Flour Substitution. Honestly…I had no idea. But I did some research and found a simple answer “King Arthur Measure for Measure Gluten Free Flour”. When I shared this with Virginia she stated that Measure for Measure Gluten Free Flours usually left the cookies with a weird texture. Despite that she decided to give the King Arthur Product a try.

Success! Last night I received a message from Virginia. Sierra had baked my Snickerdoodle Recipe with the King Arthur Gluten Free Measure for Measure Flour and they were AMAZING. None of the weird texture issues they had experienced over the years trying “measure for measure” flour substitutes. Sierra was so thankful and delighted. Next up Lemon Bars with the King Arthur product. I am sure Virginia and Sierra will share the results. (Sierra’s cookies pictured to the right.)

I know this may seem like a little thing…but when you suffer from Gluten Intolerance you just want to be able to eat something without pain and discomfort. Even though there are 1000’s of great recipes that are Gluten Free using Almond and other flour substitutes its a lot of fun to just see a cookie recipe using flour and make it your own with a great Gluten Free product like the King Arthur Gluten Free Measure for Measure Flour.
