Parmigiano Reggiano

It all begins with a great ingredient. Today I am going to talk about my obsession with a wedge of real Parmigiano Reggiano. I happen to buy mine at Costco because it is easy (at least it used to be easy pre COVID 19) but anywhere you can get a real wedge of Parmigiano Reggiano - DO IT! As a prelude to some future recipes freshly grated parmigiano beats the already grated one hands down. It is the one ingredient you should invest money and time in. Time because it involves a little bit of work to grate it and money because a 1.5 pound wedge will cost about $17. So why do this? Not only is the flavor of the cheese superior but there is one thing you get with a real wedge of parmigiano reggiano that you don’t get with the already grated product and that is the RIND! See that golden deliciousness around the cheese - DON'T throw that away! Tossing a piece of the rind into spaghetti sauce or soup can turn you into a culinary rock star. I will be posting some recipes using this ingredient. Sadly I consider this ingredient the critical ingredient in all of them. Invest in a wedge…you won’t be sorry.
