When Life Gives You Lemons… Make Lemon Bars

My family has been sheltering in place since March 13th. It’s hard to believe that for 32 days we have been Staying at Home. But as the old saying goes “when life gives you lemons…make Lemon Bars (lemonade but you get the idea). Over the past 32 days I have been learning how to create a website, how to take video of cooking tips and process and cooking up a storm. I have gotten a ton of great feedback on the BLOG. I love the pictures you have shared of the items you have made from the BLOG during this “shelter in place” time. Many of you have shared frustration that you can’t find yeast or flour and I can believe that…there is not ONE bag of flour in any of the grocery stores I have visited. The other feedback I have received is that you would like to see me on video. I initially avoided this taking a “Sia” approach to my video productions (you know the musician who wrote Chandelier and never shows her face - see picture). My videos up to this point have been only my hands - which is kind of comical as my hands are not my best feature. On top of that we are in quarantine, none of us have had haircuts, or our eyebrows done, or hair color etc. BUT if having me on video is your feedback…well you shall have it. Just remember this was my first time talking to the camera and for whatever reason I couldn’t look it in the “eye”…but like everything “try try again” until you get it right. Life is giving all of us lemons right now and all we can do is to make something positive out of it. We are all struggling in different ways. Some of you have lost your jobs, others are struggling with working at home with children under foot waiting to be home schooled. Many are worried about paying their bills…so the fact that I have not had my hair cut in eight weeks just really isn’t important!

Now on to the featured recipe. Lemon Bars are one of my favorite things…they are a cross between pie and a cookie and a good lemon bar is my own personal Nirvana. My daughters Mother-in-Law Faye makes an amazing lemon bar. Possibly one of the best ones of the several that I have enjoyed. The Lemon Bar that I am sharing is very close to Faye’s amazing creation. It is simple to make and it is so delicious. Two important things to note. One is to wait until five minutes before the crust is done baking to mix your filling. If it sits too long it can separate. You can see in my video that I had a little bit of that happen. No matter because the bars still turned out amazing. The second thing is to be patient. After the bars cool completely you should put the pan in the refrigerator for a couple of hours prior to cutting.
