Grammy Jo’s Chocolate Cake

Happy Mother’s Day to all you wonderful Mom’s out there. I am missing my Mom who passed away two years ago and I am also missing my children as we are still social distancing. In honor of my Mom for Mother’s Day I decided to make a cake she made for as long as I can remember. This cake is super simple to make and so delicious. If you love Chocolate than this cake is the one for you! I know this cake is also one that my kids think of when they think of my Mom. I honestly don’t know where the recipe for this cake came from. Possibly my Mom saw it in a magazine years ago or perhaps she “winged it”. But when it was time for a cake my Mom was frequently asked to make this one. The three basic components of this cake are a deep chocolate cake, whipping cream and Heath Bars.

We always referred to this cake as the Chocolate Heath Bar cake but I think from this point forward I am renaming it to Grammy Jo’s Chocolate Cake because we can’t have this cake and not think of her.

What makes this cake so delicious is the melding of the dark chocolate cake, whipped cream and chocolate toffee candy pieces. It isn’t a difficult cake to make. I have included the simple recipe and you can view it by clicking the jump to recipe button. Feel free to use your favorite Chocolate Cake Mix or Recipe. The icing will make the cake less relevant so there is no magic to the cake other than it should be a deep chocolate. My Mom would have chosen Duncan Hines Devils Food Cake, for me I love the dark chocolate cake mix from King Arthur, my daughter would choose to bake a Chocolate Cake from a scratch recipe. It just doesn’t matter because dark chocolate cake mixed with this icing is just a winner. Think of my Mom when you make this cake because we sure do. Mangia!
